A pétillant naturel rosé from Donati Camillo in Emilia-Romagna, made from early-harvested Barbera draining off the skins without maceration and bottled before fermentation is complete — a manifesto of lightness, freedom, and joy.
Tasting Notes
Creamy and fine-bubbled, with bright red cherry, wild strawberry, and a refreshing acidity that comes from harvesting before full phenolic maturity. Bone dry on the finish. The Ribelle (rebel) name suits it perfectly — this is the opposite of heavy Emilian red. Excellent with charcuterie, pizza, or nothing at all.

Donati Camillo is a small natural wine producer in Emilia-Romagna working with the region's traditional grape varieties including Trebbiano, Lambrusco, Barbera, and Malvasia. Farming organically and biodynamically across 11 hectares with minimal intervention in the cellar, they produce wines that are honest, unpretentious, and deeply rooted in the food culture of the region.
