About this wine
Quimera is named after the Chimera, the composite creature of Greek myth. A five-grape Bordeaux blend from Mendoza, and the estate calls it an impossible quest, since the blend is reassembled every vintage rather than fixed.

Tasting notes
Deep ruby with purple hues, bright and concentrated. Blackberry, plum, tobacco, earthy minerals, herbs and subtle spice. Medium to full bodied with refined tannins, vibrant acidity and a mineral driven backbone. Dark fruit, bay leaf, chocolate and fresh herbs lead into a long, balanced finish with a chalky texture and lingering savoury tones. Fruit comes from several sites across Luján de Cuyo and the Uco Valley, at elevations between 700 and 1,100 metres.
Goes with
Grilled red meats, lamb, hearty stews, roasted vegetables, and aged cheeses such as Manchego or Pecorino.

Achaval-Ferrer was founded in Mendoza in 1998 and made its name with single vineyard Malbecs from very old, ungrafted vines at extremely low yields. The estate works across Luján de Cuyo and the Uco Valley at elevations between 700 and 1,100 metres.
