Les Clos is the largest and most historically important of the seven grand crus of Chablis, and for many the finest. Kimmeridgian limestone laid down in a shallow sea 150 million years ago, full of fossilised oyster shells, and you can taste it.
Tasting Notes
An aromatic bouquet of fresh citrus, lemon zest and grapefruit, layered with white blossom, green apple and a subtle saline minerality, with hints of honey, almond and crushed oyster shell adding depth. Precise and impeccably balanced on the palate, with vibrant acidity and a rich, creamy texture. Crisp pear, lime and a touch of peach intermingle with chalk, wet stone and a faint smokiness. The finish is long and elegant with a refined mineral edge. Chablis of this level is austere in youth and needs time.

Serve at 11 to 13°C, not colder. Will continue to develop for ten to fifteen years.
About the Producer
Maison Joseph Drouhin was founded in Beaune in 1880 by Joseph Drouhin, who had arrived from Chablis at the age of 22. His son Maurice bought the Clos des Mouches in 1921 and began building the family's own vineyard holdings, and Robert Drouhin, who took over in 1957, added parcels in many of Burgundy's greatest grand crus. The house is run today by the fourth generation, Frédéric, Véronique, Philippe and Laurent, from cellars beneath the old town of Beaune dug between the 13th and 18th centuries. Every estate vineyard has been farmed organically and biodynamically since 1993, making Drouhin the largest biodynamic producer in Burgundy.
