A pétillant naturel white from Valli Unite's Tortona Hills cooperative, made from Barbera and Croatina — bright straw with fine natural bubbles, green apple, pear, and citrus on the nose, bone dry on the finish, and every bit as playful as the name suggests.
Tasting Notes
Bright straw with fine, persistent natural bubbles. Green apple, pear, citrus zest, and a fresh herbal note on the nose with light floral undertones. Dry, crisp, and refreshing on the palate with lively acidity, delicate fruit, and a clean, energetic finish. The BRUT & The Beast is the white companion to the ROSÉ & The Beast — same philosophy, same cooperative spirit, different grape expression.

About the Producer
Valli Unite is a cooperative of 35 producers founded in 1981 in the Tortona Hills of Piedmont, farming 100 hectares across 35 members with a shared commitment to organic viticulture and natural winemaking. Since converting to organic methods in 2006 and adopting spontaneous fermentation in 2013, they have become one of northern Italy's most respected natural wine estates. The cooperative model means the wines reflect a genuine community effort rather than a single winemaker's vision.
