About this wine
A pure Dolcetto from Valli Unite's Tortona Hills, where the grape shows a different side to its more famous incarnations in Dogliani and the Langhe, juicy, dark-fruited, and dry with that characteristic bitter almond finish that makes Dolcetto so compelling with food.
How it tastes
Open 10 minutes before serving.
Tasting notes
Intense ruby red in the glass. The nose is vinous and expressive with dark fruit, dried cherry, and a herbal, mineral note. On the palate it is dry and generous, with Dolcetto's characteristic grape and plum fruit, a medium body, and the pleasantly bitter almond finish that defines the variety. Named Diogene, perhaps for the philosopher's love of simple pleasures.
Goes with
Salami, pasta, grilled chicken, pizza, and soft cheeses. The quintessential northern Italian everyday red.

The producer
Valli Unite is a cooperative of 35 producers founded in 1981 in the Tortona Hills of Piedmont, farming 100 hectares across 35 members with a shared commitment to organic viticulture and natural winemaking. Since converting to organic methods in 2006 and adopting spontaneous fermentation in 2013, they have become one of northern Italy's most respected natural wine estates. The cooperative model means the wines reflect a genuine community effort rather than a single winemaker's vision.
