Olmeca Altos came out of a collaboration between Maestro Tequilero Jesús Hernández and the London bartenders Henry Besant and Dre Masso, who wanted a 100% blue agave tequila good enough to drink neat but priced for the back bar. It is made in Arandas in the Los Altos highlands of Jalisco, at 2,104 metres, where the altitude gives sweeter and more aromatic agave. The piñas are slow roasted in traditional Mampostería brick ovens, then crushed two ways, part by modern roller mill and part by the 500 year old tahona stone, before distillation in small copper pot stills. Bottled without ageing.

Tasting Notes
Crystal clear. Herbal aromas of cooked agave, slightly citric and sweet, very aromatic and fruity, with white pepper and a hint of sea salt. Soft and almost leathery in the mouth, opening on sweet agave and lime before drying into white pepper, nutmeg and a mineral, straw like note. Clean, well balanced and long, with the pepper spice lingering.
