The rested expression of Olmeca Altos, from the same collaboration between Maestro Tequilero Jesús Hernández and bartenders Henry Besant and Dre Masso. Made in Arandas in the Los Altos highlands of Jalisco at 2,104 metres, with piñas slow roasted in Mampostería brick ovens and crushed partly by modern roller mill and partly by traditional tahona stone, then distilled in small copper pot stills. It is then laid down in 200 litre white American oak ex bourbon casks for several months, which is what separates it from the Plata.

Tasting Notes
Light gold. Sweet citrus on the nose, orange and grapefruit, lifted by cooked agave, vanilla and a clear woody note. The palate is silky and sweet on entry, filling out with caramel, toffee and toasted nut, with a gentle smokiness and a touch of black pepper adding complexity. Robust but pleasant, ending on tannin and citrus in a long, well balanced finish.
