About this wine
A Blanc de Blancs Champagne from Val Frison's Les Cotannes parcels in the Côte des Bar, made from 100% Chardonnay on Portlandian limestone, fermented in old Chablis barriques with 24 months on lees and zero dosage.
Serve at 8 to 10°C in a wide-mouthed glass.
Tasting notes
Beautiful texture and fine bubbles reveal a herbal palate that brings to mind wild rocket. There is a terroir inflection here that is genuinely reminiscent of superior white Burgundy, Chablis in particular, which makes sense given the limestone soils and the used Chablis barriques. Long, precise, and mineral on the finish.
Goes with
Ideal as an aperitif or alongside cured meats and sushi. The herbal precision also makes it an excellent match for grilled fish.
