Name of Estate/Domaine:
Domaine Christian Binner
Country/Region:
France, Alsace
Grape/Blend:
Muscat grapes, specifically a selection of noble grapes (botrytis berries).
Tasting Notes:
Appearance: rich golden color. Aroma: intense aromas of dried fruits like apricot, honey, orange peel and floral notes. Palate: flavors of candied citrus fruits (orange, lemon), honeycomb, spices (cinnamon, nutmeg), and a sweet but balanced acidity.
Terroir:
The Kaefferkopf vineyard is located on granite soils with south-eastern exposure. This terroir provides excellent conditions for ripening Muscat grapes under optimal sun exposure.
Vinification:
Hand-harvesting late in the season to ensure fully ripened fruit affected by Botrytis cinerea (noble rot).
Fermentation occurs spontaneously without added sulfur or other inputs.
Aging typically takes place in old oak vats or foudres to preserve natural complexity.
Food Pairing:
Pairs well with desserts like cheesecake or fruit tarts due to its sweetness and complexity. It also complements blue cheeses nicely because of its acidity.
For optimal preservation: Store at around 10°C (50°F) away from light. Serve chilled at approximately 8°C to 10°C (46°F to 50°F) for best flavor expression when pairing with desserts or cheeses.
