Description

A characterful, herb-driven Languedoc white from the rare Terret grape, grown near the Thau lagoon where the Mediterranean and limestone combine to produce wines with a distinctly savoury, almost vermouth-like personality.

Tasting Notes

Pale gold in the glass. The nose is quite vinous and herbal in style, with aromas of dried fruit, fennel, and wild herb, reminiscent of a dry vermouth. On the palate it is medium bodied with a lively acidity, dry and clean, with a pleasantly bitter finish. A wine for those who enjoy something a little out of the ordinary.

Quick Facts

  • Grapes: 90% Terret, 10% Carignan Blanc
  • Origin: France, Languedoc (IGP Pays d'Oc, near the Thau lagoon)
  • Style: Dry white, sustainably farmed, clay-limestone terroir
  • Winemaking: Destemmed, fermented in stainless steel at low controlled temperature, 3 to 4 months in stainless steel, lightly filtered and fined, small amount of sulphur added

Food Pairing

A natural match for salad nicoise, trout with green beans, spaghetti al pesto, and cheese souffle. The savoury character also makes it an interesting aperitif.

Serving

Serve at 8-10°C. Best enjoyed young and fresh.

About the Producer

Mas de Daumas Gassac was established by Aimé and Véronique Guibert in Aniane, Languedoc, after a Bordeaux soil scientist identified their limestone-rich land as having exceptional grape-growing potential akin to Burgundy's Côte d'Or. Farming organically since 1974, the estate has become one of southern France's most celebrated and unconventional producers, earning the nickname "the Lafite of the Languedoc." Their second label, Moulin de Gassac, was created in the 1990s to produce fun, accessible wines from the surrounding countryside in partnership with local growers, with vinification closely overseen by the Guibert family.
