Description

Rustic, alive, and wonderfully thirst-quenching, this Piemontese field blend of Cortese and Timorasso is natural winemaking at its most honest and unpretentious.

Tasting Notes

Hazy pale gold in the glass from brief skin contact and zero filtration. The nose is fresh and inviting, with aromas of summer flowers, yellow plum, wild herbs, and a streak of racy mineral. On the palate it is light to medium bodied, crisp, and alive, with flavours of stone fruit and citrus rounded by a gentle herbal edge. The finish is clean and refreshing.

Quick Facts

  • Grapes: Cortese, Timorasso
  • Origin: Italy, Piemonte (Tortona Hills, Costa Vescovato)
  • Style: Dry natural white, zero added sulphur, unfiltered, unfined, biodynamic
  • Winemaking: Indigenous yeast fermentation in stainless steel tanks, brief skin contact, spontaneous malolactic fermentation
  • Suitable for vegetarians and vegans

Food Pairing

A natural companion to poultry, soft cheeses, rich seafood dishes, and raw shellfish. Also excellent alongside a simple pasta or as an easy aperitif.

Serving

Serve at 10-12°C. Some natural cloudiness or light sediment is normal and a sign of minimal intervention, not a fault.

About the Producer

Valli Unite was founded in 1981 by three young farmers in the Tortona Hills of southeast Piemonte who chose to stay on the land rather than move to the cities. Today the cooperative has grown to 35 members working across 100 hectares, producing wine, honey, salami, vegetables, and running an agritourism restaurant on site. They moved into natural winemaking in 2006 and by 2013 were working entirely with spontaneous fermentations, no additives, no shortcuts. One of Italy's first natural wine cooperatives, and still one of its most genuine.
