Description

Born from a biodynamic farming co-op in the hills of Piemonte where grapes are still foot-stomped at harvest, this is natural winemaking as a way of life, not a marketing label.

Tasting Notes

Intense ruby red in the glass, with a vinous, earthy nose showing aromas of ripe dark cherry, plum, dog rose, and a characteristic gamey, smoky depth. On the palate it is dry and medium-to-full bodied, with brisk acidity and a pleasantly chewy, protein-loving tannin. The finish carries a distinctly bitter edge and lingering fruitiness, the hallmark of traditional Piemontese reds done the old way.

Serving

Serve at 16-18°C. Open at least 15 minutes before serving or pour into a carafe, natural wines open up beautifully with a little air.

About the Producer

Valli Unite was founded in 1981 by three young farmers in the Tortona Hills of southeast Piemonte who chose to stay on the land rather than move to the cities. Today the cooperative has grown to 35 members working across 100 hectares, producing wine, honey, salami, vegetables, and running an agritourism restaurant on site. They moved into natural winemaking in 2006 and by 2013 were working entirely with spontaneous fermentations, no additives, no shortcuts. One of Italy's first natural wine cooperatives, and still one of its most genuine.
