A pure Assyrtiko from Kamara Pure in northern Greece, cold-macerated briefly before stainless steel fermentation and aged three months on fine lees — a white of bright golden colour, intensely aromatic, and harmonious in the mouth with a long, herbal finish.
Tasting Notes
Bright golden colour. Rich and intense on the nose, evolving in the glass from pear and quince to sage, achillea, and laurel. Harmonious in the mouth with a long-lasting aftertaste of fresh herbs and mineral precision. Assyrtiko from the mainland rather than Santorini has a distinct character — more aromatic, less volcanic, and no less compelling.
